Mango and Ginger Wake Up

This delightful yoghurt and mango breakfast can be made in only a matter of a few minutes if you are in a rush, and is just perfect if you seek a healthy alternative to the classic quick start to the day of tea and toast. You will see I am vague with the quantities as basically make each glass as large as you want if making for several people or less if only one person. I let you decide. For a more dense texture, prepare overnight and store in the fridge.

Ingredients

  • Fresh ripe mango
    - skin and stone removed, cut into slices
  • Heaped tablespoons plain Greek yoghurt
    - or non dairy alternative
  • A few crystallised ginger chunks
    - sliced very thinly
  • Heaped tablespoons of oats
  • Toppings
  • Toasted almonds flakes

Instructions

  • Prepare mango and ginger:
  • 01 Remove outer skin and slice. Thinly slice the crystallised ginger.
  • Assemble:
  • 02 Alternatively layer Greek yoghurt, mango, crystallised ginger and oats in attractive glasses.
  • Topping:
  • 03 Sprinkle with toasted almond flakes.
  • Serve:
  • 04 Enjoy immediately.

Notes

This delicious breakfast can be made and stored in the fridge overnight. The oats will become more sticky and basically become the classic overnight oats we all love.
