Cumin Cucumber Raita Salad

The perfect yoghurt based raita salad using thick plain yoghurt, cucumbers and delicately flavoured with cumin and a touch of black pepper.

Ingredients

  • 350g plain full fat yoghurt
    - or plain yoghurt non dairy alternative
  • 1 large telegraph cucumber
    - washed, cut into small cubes
  • 1 large tsp cumin seeds
  • Grind of back pepper
  • Garnish
  • Scattering of cumin seeds

Instructions

  • Step ONE:
  • 01 Prepare cucumber; wash and cut into small dice. Peel if you wish but not necessary.
  • Step TWO:
  • 02 In a bowl mix yoghurt and cucumber. Season with black pepper and cumin seeds. Turn into a small attractive serving bowl. Sprinkle more cumin seeds on the top. Cover with cling film and chill in the refrigerator until required.
  • Serve:
  • 03 Take to the table as is an enjoy with your favourite curry.

Notes

I like to make this raita with thick plain Greek yoghurt but of course if seeking non dairy, then use your favourite plain plant based alternative.
