I am sharing with you today a great recipe for those of you who own a slow cooker. My kind of cooking, as it is created in one pot and left to simmer on its own until tender. Voila.... dinner is served!

The recipe is for a Moroccan style Slow Cooked Beef Tagine seasoned with cumin, spices and butternut squash. Full of robust flavours yet with the traditional sweet tagine touch by the addition of raisins and sliced sweet red peppers. DELICIOUS.

Never be afraid to make and bake something you know you and your family will love. By popular demand, please enjoy this easy to follow reel for a Burnt Basque Cheesecake - so simple and so delicious. Treat yourself today ❤️

Preparation time: 25 minutes
Cooking time: 1 hour +
Oven temp : 220°C

💥Cheesecake💥
750g cream cheese - softened
220g caster sugar
4 large eggs
375ml double cream
1 tsp vanilla paste
1½ tbsp plain flour

💥Instructions💥
Preheat oven to 220°C
*Prepare tin*
Line a 22cm (8½ inch) round springform cake tin with 3 large pieces of overlapping non-stick baking paper, ensuring paper comes above the rim, to prevent the cheesecake from burning, as it bakes at such a high temperature.
*Make cheesecake batter*
Place the cream cheese and sugar in the bowl of an electric mixer. Using the whisk attachment, beat until smooth and soft peaks form. Add eggs one at a time, beating after each addition, until combined. Add the cream and vanilla and beat until just combined. Sift in the flour and beat on a low speed, until thick.
*Bake*
Pour into the prepared tin and bake for 15 minutes, then rotate and bake for a further 10–15 minutes. The cheesecake should rise up like a soufflé and caramelise, almost burning on the top, but still have an extreme jiggle in the middle. Once out of the oven, allow to cool for 1 hour (the cheesecake will sink a bit), then refrigerate until chilled.

I absolutely love potatoes. I really do and truly do not mind how they come; mashed, baked or roasted. Seriously I am addicted ... and this recipe for me is another winner.

The recipe is Turmeric Roast Potatoes. A delicious roast potato recipe where raw potatoes are steeped in turmeric flavoured water, lightly par-boiled and then tossed in a semolina seasoned flour which when roasted in coconut oil gives a delicious golden crunch. Red onions and garlic are also added for that extra roasted bang.

As promised, my REEL on how to make the classic CHEESE SAUCE - useful for macaroni cheese, cauliflower cheese and topping for lasagne or any baked recipe which requires a ROUX based cheese sauce.
Here you go!

🧀Cheesy Sauce🧀
40g butter
50g plain flour
450ml milk
130g mature cheddar cheese - grated
1 tsp English mustard

Instruction
🧀Make cheesy sauce🧀
The cheese sauce starts with a roux base, so gently melt butter in a pan over a low heat, then stir in 50g plain flour. Cook, stirring constantly, for just a few seconds until it forms a smooth, thick paste.
🥛 Measure out 450ml milk. Pour a little into the pan and stir until smooth. Keep adding the milk, a little at a time, stirring until fully combined. Cook gently for another 2 mins, stirring to stop it catching on the bottom. Add all mature Cheddar cheese, grated, and 1 tsp English mustard and stir until melted into the sauce. Season and remove from the heat.

Use a wire whisk for that perfect LUMP FREE sauce 😃

Upon popular demand I repost again one of my favourite family recipes.... Macaroni cheese, which has to be one of those ‘go to recipes’ suitable for a weekend supper, pleasing all the family. I also highly recommend this recipe if you have been unwell and wish to ‘build & comfort’ your appetite.

Traditionally always made with elbow macaroni pasta but will also work using penne pasta or other shapes. Use the milk quantity as a guideline and add more milk should the cheese sauce mixture be too thick for your liking. I always make this dish several hours in advance, allow it to cool and when cool, cover and keep refrigerated until I wish to bake.

Being a great lover of slow cooked casseroles, please enjoy this recipe and if you cannot get venison then a quality stewing beef will do just the job! If you do not have a slow cooker, slow bake in the oven.
💥Slow Cooker Venison Casserole💥
A rich hearty venison stew, slowly cooked until tender and full of delicious flavour. For a more in-depth recipe go to link in bio 🥰

Serves 6
Preparation time: 2-3 day marinade, 30 mins preparation
Cooking time: slow cook several hours in slow cooker

🛒Ingredients🛒
800g quality stewing venison - cut into 2cm chunks
🎊Marinade🎊
2 tbsp olive oil
1 raw onion - rings
2 tbsp juniper berries
First bouquet garni of fresh herbs - parsley, sage, thyme, rosemary
2 bay leaves
Red wine - to cover
🎊Seasoned Flour🎊
2 tbsp plain flour
Pinch of sea salt
Heavy grind of black pepper
🎊Casserole🎊
2 large tbsp extra virgin olive oil
2 onions - peeled and roughly chopped
3 carrots - peeled and roughly chopped
175g button mushrooms - cleaned, thickly sliced
2 large cloves of garlic - thickly chopped
Second fresh bouquet garni fresh herbs - parsley, sage, thyme, rosemary
1 x 538 ml can Guinness - or stout
1 organic beef stock cube
50-100 ml of the marinade liquid
Sea salt - to taste
Plenty freshly grated black pepper
🎊Serve🎊
Creamy mashed potato and an extra knob of butter.

💥Instructions💥
*Step 1
Marinate the venison
Place venison and marinade ingredients into a sealed container and marinade for 2-3 days in the refrigerator.
*Step 2
Make casserole using slow cooker
Drain liquid from venison by using a sieve. Discard berries, onions and herbs. Reserve liquid for later. In a large bowl place the venison, add seasoned flour and coat well.
*Step 3
Heat oil in a pan within a slow cooker. When very hot add venison in stages, remove. Set to one side. Add onions and garlic. Soften. Add all remaining ingredients including marinade liquid. Season well and add a fresh bouquet garni.
*Step 4
Slow cook on low for several hours.
Serve with creamy mash.

1 fresh haddock fillet per person
💋Flavours💋
fresh ginger - peeled, cut into matchsticks
garlic cloves - chopped
lemon - thinly sliced
baby spinach
chilli 🌶 oil
sesame oil
💋OTHER💋
Baking parchment for creating parcels
cooked jasmine rice

👍Instructions👍
Prepare all ingredients
Lay out individual baking parchment parcels.
Place 1 fish fillet on top of the paper. Add ginger, lemon, baby spinach, splash of chilli oil, splash of sesame oil. Wrap to form secure individual parcels.
Place in your steamer and cook HIGH for 20 minutes.
💋Serve💋
Open the parcels and serve with freshly boiled jasmine rice with a splash of soya sauce. DELISH!

When life gets busy, food has to be FAST, EASY, SI

When life gets busy, food has to be FAST, EASY, SIMPLE, DELICIOUS to make and of course so TASTY to EAT!

CHECK out this reel - I literally opened the fridge, found the following and put it all together!

💥Ingredients💥
boursin garlic cheese
handful mushrooms - chunked
4 sticks of celery - washed & sliced
cherry tomatoes - whole
2 small red onions - peeled and quartered
1 green pepper - core removed & sliced
1 red pepper - core removed & sliced
2 jalapeno peppers - sliced
generous amount extra virgin olive oil
sea salt & ground black pepper
handful of baby spinach - added last
spaghetti - cook

🤩HOW TO MAKE🤩
*chop veggies
*place boursin in the centre of an ovenproof dish
* add ALL ingredients around the boursin cheese except for spinach
*add generous glug extra virgin olive oil
*sprinkle salt & pepper
*cover with tin foil
*bake 180ºC oven for 30 mins
*remove from oven, lift tin foil, add spinach, cover and bake 5-10 minutes
*meanwhile cook spaghetti pasta
*remove from oven, remove lid and mix. Add spaghetti. Mix and ENJOY!
