Smoked Salmon Delights

Smoked salmon delights are an excellent low calorie snack perfect for serving up to guests when entertaining. Full of natural flavours and freshness. The perfect accompaniment to any alcoholic or non alcoholic bubbly drink.

Ingredients

  • 200g smoked salmon
  • 2 Gem lettuce
    - washed, trimmed and separated into individual leaves
  • Plenty of fresh lemon juice
  • Relish
  • Large handful baby tomatoes
    - finely chopped
  • 2 sticks of celery
    - cut small, thinly sliced
  • 2tbsp French style vinaigrette
    - commercial will do
  • Generous amount of freshly ground black pepper
  • Garnish
  • Extra fresh lemon
    - thinly sliced

Instructions

  • Prepare lettuce and other ingredients:
  • 01 Wash, trim and spin dry the baby Gem lettuce. Separate the salmon for usage, juice and slice lemons.
  • Make relish:
  • 02 Finely chop baby tomatoes and celery. Place in a bowl and moisten with 2 tbsp of vinaigrette. Check Seasoning and reserve for later. Mix well.
  • Assemble:
  • 03 Lay lettuce leaves on an attractive serving board or plate. Lay smoked salmon on each leaf, top with relish. Splash lemon juice all over.
  • Serve:
  • 04 Take to the table with an additional garnish of thinly sliced lemons.

Notes

These moorish delights can be made ahead of time, covered with cling film and kept in the refrigerator until required.
