Recipe

A versatile savoury blue cheese dip, especially useful for a snack with crudités or delicious alongside a main meal such as American Chicken Wings (click the link for the recipe) and other such roasted meats and grills. Superb with a simple baked potato.

  • 200ml whole milk
  • 1/2 lemon – juice only
  • 1 tsp honey – runny

Ingredients

  • 50g blue cheese
    - stilton, gorgonzola, roquefort or danish
  • 50g cream cheese
  • 200ml buttermilk
    - commercial or homemade
  • Handful of parsley
    - chopped
  • 1 small bunch of chives
    - roughly chopped
  • Seasoning
    - to taste

Instructions

  • 01 Place all ingredients into a food processor or liquidizer and blitz until smooth.
  • 02 Store in a clean jam jar or plastic container and keep chilled in the refrigerator to use when required.

Notes

Any blue cheese works well with this distinctive flavoured cheese based dipping sauce. If you are unable to buy commerical buttermilk, make your own. See recipe above in introduction.
