Grilled Pepper Hummus

Hummus made from chickpeas and a jar of store bought, drained grilled red and yellow peppers, tahini, garlic, lemon and seasoning. Garnished with Dukkah, a Middle Eastern spice mix.

Ingredients

  • 400g can chickpeas
    - drained, rinsed
  • 1 tbsp tahini
  • 2 cloves of garlic
  • 1 lemon
    - juice only
  • 280g jar of grilled red and yellow peppers in oil
    - store bought, drained
  • Heavy pinch of sea salt
  • Lots of freshly ground black pepper
  • Garnish
  • 40g store bored Dukkah
  • Heavy drizzle of Extra Virgin Olive oil
  • Pitta toasts

Instructions

  • Make hummus:
  • 01 Place the chickpeas, tahini, garlic, lemon juice, grilled peppers, salt and pepper in a food processor and process until smooth. 
  • Serve:
  • 02 Place on a serving plate or in an attractive bowl. Drizzle Extra virgin olive oil all over the top and heavily sprinkle Dukkah all around the edge. Offer slices of pitta bread or raw carrot pieces as dunkers for the hummus.

Notes

This delightful hummus is made with store bought grilled peppers marinated in oil. No need to discard the oil when draining, keep and use in pasta sauces or as a salad dressing.
