A vegetarian twist on the Spanish classical dish Paella. Very suitable for those wishing to omit meat and seafood, in fact definitely classified as a vegan version.

Do not worry if you do not have a traditional paella dish, as can be made in a frying pan but do use a large one with deep sides and if possible a lid, however, if the lid is not possible cover the top with a large piece of tin foil, sealing well around the sides.

Naturally tastes the best hot straight from the oven, but can still be just as delicious the next day hot or cold.

Ingredients

  • 400g can black eye beans
    - washed and drained
  • 1⁄4 tsp saffron threads
  • 2 tbsp olive oil
  • 1 red onion
    - diced
  • 1 large red pepper
    - seeds removed and cut into strips
  • 5 whole garlic cloves
    - skin removed and crushed
  • 275g paella rice
    - or short grain rice
  • 1 tbsp sweet mild paprika
  • 1⁄2 tsp allspice
  • 600ml vegetable stock
    - or water
  • 400g can tomatoes
    - chopped
  • 2 tbsp tomato paste
  • 400g can chick peas
    - washed and drained
  • 100g fresh rocket
    - washed and sliced thinly
  • 400g can artichokes hearts
    - drained and quartered
  • Freshly ground black pepper
  • Salt to taste
  • Garnish:
  • Thinly sliced red onions rings

Instructions

  • Soak saffron:
  • 01 Place saffron threads in a small frying pan over a medium heat. Dry fry for 1 minute or until darkened. Remove from heat and when cool crumble in a small bowl. Pour over 125 ml of warm water and allow to steep.
  • Make the paella:
  • 02 Heat oil in a paella pan or large frying pan; add onion and red pepper and cook until soft. Add garlic.
  • 03 Reduce heat and now add rice, canned beans, paprika, allspice and seasonings. Add the saffron water, vegetable stock/water, tomatoes, tomato paste, artichokes and shredded rocket. Bring gently to the boil.
  • 04 Cover with a lid or tin foil and place in a the oven and bake for 40 minutes or so until all the liquid has been absorbed and rice is cooked.
  • Garnish:
  • 05 Take to the table in the paella dish garnished with the thinly sliced onion rings or serve in individual bowls.

Notes

If you are unable to get rocket use fresh spinach.
