Easy Shortcut Lasagne

A fabulous one pot baked lasagne. No white sauce, just a wonderful cheesy topping. Delicious easy supper for all the family to love.

Ingredients

  • Meat Sauce
  • 1kg lean beef mince
  • 1 tbsp virgin olive oil
  • 2 cloves of garlic
    - skin removed, crushed
  • 1 large onion
    - roughly chopped
  • 2 sticks celery
    - thinly sliced (optional)
  • 250ml beef stock
    - or water
  • 1 x 400g can chopped tomatoes
  • 2 tbsp tomato puree
  • Freshly ground black pepper
  • Pinch sea salt
  • Lasagne
  • 10 pieces or more of easy cook lasagne
  • Topping
  • Mozzarella
    - sliced thinly
  • Grated parmesan
  • Chopped parsley

Instructions

  • Make meat sauce:
  • 01 Using a large flat based pan (the one you wish to serve the final dish to the table in) add oil, heat and add onions to soften, add garlic and celery. Soften, add minced beef. Brown and when minced beef is coloured add remaining ingredients. Bring to a gentle simmer and cook for 45 minutes to form a rich, tomato beef sauce.
  • Assemble:
  • 02 Using the same pan, add slices of lasagne on an angle into the rich sauce. Cover with a lid and simmer on the hob until lasagne pasta is soft.
  • Final bake in the oven:
  • 03 Remove the lid and cover top of softened lasagne with slices of mozzarella and generous amounts of parmesan cheese, and finally the chopped parsley. Place pan in the oven and bake for 20 minutes or so until the top is melted and golden brown.
  • Serve:
  • 04 Enjoy hot either with buttery fried courgettes or a healthy green salad.

Notes

It is possible to use a mix of beef and pork for the meat sauce and wholewheat lasagne if preferred.
