Miso Soup with Tofu

A delightful Japanese influenced style soup which is so easy to make, extremely healthy and full of natural goodness.

Ingredients

  • 4 tbsp white Miso paste
    - or 6 individual sachets Miso powder
  • 2 tsp fish sauce
  • 2 tbsp soy sauce (Japanese)
  • 6 cups of hot water
  • 340g firm tofu
    - cut into small cubes
  • 100g Asian greens
    - or bok choy, washed and trimmed
  • 400g Japanese Udon noodles
  • Garnish
  • 4 spring onions
    - finely chopped
  • Sesame seeds

Instructions

  • 01 Place Miso, fish sauce, soy and water in a saucepan and bring to the boil. Reduce heat to a simmer and add all remaining ingredients bar the spring onions. Cook for 2 minutes or until noodles tender.
  • Serve:
  • 02 Ladle hot soup into small bowls, garnish with finely chopped spring onions and a sprinkling of sesame seeds.
