Nachos Night Nibbles

 A delightful easy recipe using commercial prepared nachos, beans, cheese, spicy sausage and avocado, smothered with a thick plain Greek yoghurt. The perfect TV dinner or snack for all the family to enjoy.

Ingredients

  • 2 x 200g bag of salted tortilla chips
  • 180g Monterey cheese
    - or strong cheddar, or plant based grated
  • Pickled Onion Salsa
  • 2 tbsp cider vinegar
  • 1 tbsp caster sugar
    - or runny honey
  • 1 red onion
    - halved and finely sliced
  • Pinch of sea salt flakes
  • Chorizo Beans
  • 1 tbsp Extra Virgin Olive Oil
    - or rapeseed
  • 1 red onion
    - finely chopped
  • 120g Chorizo sausage
    - or plant based alternative, cubed
  • 400g kidney beans
    - washed and drained
  • 2 tsp smoked paprika
  • 2 tsp clear runny honey
    - or agave syrup
  • Topping and Layering
  • 3 ripe avocados
    - peeled, roughly chopped
  • 2 tomatoes
    - seeds removed and cut into small pieces
  • 1-2 fat chillies
    - 1 green, 1 red, both thinly sliced
  • 150g plain thick Greek yoghurt

Instructions

  • Make Pickled Onion Salsa:
  • 01 In a small bowl add the vinegar, sugar (or honey) and sea salt, whisking well. Add onion, mixing well into the vinegar mixture. Set aside and leave to infuse for minimum of 20 minutes.
  • Make Chorizo Beans:
  • 02 In a frying pan heat the extra virgin olive oil, add the onions and cook until softened. Add the chorizo sausage and cook for a further 2-3 minutes, stirring well to release the natural oils from the sausage. Now add the beans, sizzle for a few minutes. Sprinkle the paprika all over, drizzle in the honey and cook for a few more minutes. Remove from the heat and set aside for later.
  • Assemble to bake:
  • 03 Using a large roasting tin or ovenproof dish, layer tortilla chips, chorizo beans, grated cheese and chilli slices.
  • Bake:
  • 04 Place in a hot oven and cook until cheese has melted and tortilla chips have toasted edges.
  • Serve:
  • 05 Remove from the oven, drain the liquid from the pickled onion salsa, add the chopped tomatoes and scatter all these ingredients over the hot tortilla chips with spoonfuls of avocado and dollops of plain Greek yoghurt. Take to the table immediately for everyone to enjoy. Remember to provide plenty of napkins!

Notes

If wishing to avoid meat either omit the sausage or use a plant based/non animal variation.
