Apple Muesli Bars

Delicious baked apple muesli bars made with raw apple, oats, seeds, dried fruit and nuts. Full of natural goodness and flavours. The perfect accompaniment to any hot drink, and a great lunch box filler for all the family.

Ingredients

  • 175g unsalted butter
  • 140g clear honey
  • 250g brown sugar
    - soft
  • 2 medium apples
    - no need to peel, grated
  • 350g porridge oats
  • 1 tsp cinnamon powder
  • 175g dried apricots
    - chopped
  • 85g Brazil nuts
    - chopped
  • 85g raisins
  • 85g pumpkin seeds
  • 50g sunflower seeds
  • 50g sesame seeds

Instructions

  • Prepare baking tin:
  • 01 Lightly grease (butter or oil) a 23cm square tin, and line the base with baking paper - see image #8.
  • Make muesli bars:
  • 02 Melt butter and honey in a pan and then stir in the sugar - see images #2 & #3. Cook over a low heat until sugar dissolved.
  • 03 Raise heat and bring to the boil and then boil 1-2 minutes, stirring all the time until thickened into a smooth caramel sauce.
  • 04 Stir in the grated apple - see images #4, #5 & #6.
  • 05 Mix together all the remaining ingredients into a large bowl and pour over the caramel apple sauce - see image #7.
  • 06 Mix well until all ingredients well combined - see image #8.
  • 07 Spoon into the tin and press down well.
  • Bake:
  • 08 Place in the oven and bake until golden brown.
  • Cool and store:
  • 09 Allow to cool in the tin before turning out onto a board, ready to be cut. When cold store in airtight container or freeze and defrost and enjoy when needed.

Notes

This delicious fruity slice can also be made with a mashed up raw banana - just omit the apple if you decide to do this. For this recipe I used Brazil nuts but again you can use any nut of your choice, such as almonds, pecan nuts or walnuts.
