Lentil Sausage Casserole

A heart warming one pot sausage lentil casserole. Family fare at its best.

Ingredients

  • 6 large pork village style sausages
    - 1 each
  • Lentil Vegetable Mix
  • 1 red onion
    - finely chopped
  • 2 celery sticks
    - finely chopped
  • 3 cloves of garlic
    - chopped
  • 1 large carrot
    - peeled, top & tailed, finely chopped
  • 250g green lentils
    - washed
  • 150ml dry white wine
  • 700ml chicken stock
    - or vegetable stock
  • 2 tsp red wine vinegar
  • 1 tbsp Dijon mustard
  • A few sprigs of fresh thyme
  • 1 bay leaf
  • Sea salt
    - to taste
  • Freshly ground black pepper
    - to taste
  • Garnish
  • Handful of fresh parsley
    - roughly chopped

Instructions

  • Prepare sausages:
  • 01 In a large oven proof casserole pan, fry the sausages until golden brown all over. Remove and set aside.
  • Assemble everything for cooking:
  • 02 Using the same pan and sausage fat, add onion, celery, garlic and carrot until soft. Add lentils, white wine, vinegar and stock. Season and stir well. Return the sausages to the pan, resting on top of the lentil mixture. Bring to simmer. Add a lid.
  • Oven bake:
  • 03 Place in the oven to cook for 30 minutes or so until most of the liquid has been absorbed and the lentils soft.
  • Serve:
  • 04 Remove from the oven, sprinkle heavily with chopped parsley and enjoy hot on its own or with freshly cooked rice, potatoes or bread.

Notes

Use any village style sausages; pork, chicken or plant based if preferred.
