Cajun Baked Chicken Breasts
Chicken breasts baked in a creamy Cajun spiced sauce, just perfect for weeknight eats.

Ingredients

4 chicken breasts- cut into bite size pieces

Seasoning
-
2 fresh garlic cloves- thinly sliced

1 tbsp Cajun spice- commercial brand

Pinch of sea salt- optional

Cajun Sauce

2 tbsp sweet chilli sauce

2 tbsp mayonnaise
-
1 tsp sriracha- commercial brand

To serve

Freshly cooked rice

Freshly cooked spinach
Instructions

Step ONE

01 Place chicken pieces into a container, cover with all the seasonings. Mix well. Allow to marinate for minimum of 30 minutes.

02 Make Cajun sauce; in a bowl mix all ingredients together. Keep for later.

03 Place chicken pieces into an oven proof dish. Bake in the oven for 30 minutes. After 30 minutes remove from the oven and top with Cajun sauce. Replace into the oven and continue cooking for 15 minutes more. When chicken is cooked and sauce bubbling, remove from the oven and enjoy.

04 Take to the table and serve with freshly cooked Jasmine rice and pan fried buttered cooked spinach.
Notes
Either use fresh spinach leaves or frozen. No need to defrost, cook from frozen in a pan with plenty of melted butter and seasoning. It is also OK to use 1 tbsp garlic powder if you prefer.
