Easy Bake Chicken Breasts
Easy bake chicken breasts are exactly that, easy to make and bake. This recipe only requires a few simple tasty ingredients, which when baked together create a delicious healthy meal.

Ingredients

2 large chicken breasts- 1 per person

Baking Vegetables

Handful of cherry tomatoes- left whole

1 large green pepper- washed, seeds removed, cut thick slices

Several fresh bay leaves- or 2 dried

1 large red onion- thickly sliced

2-3 tbsp extra virgin olive oil

Seasoning
-
Sea salt

Generous freshly ground black pepper
Instructions

Prepare vegetables:

01 Wash, trim and cut all vegetables as instructed above.

Cook:

02 Using a good sized skillet pan, lay all the vegetables on the bottom of the pan. Top with the chicken breasts. Pour over plenty of extra virgin olive oil, season to taste with sea salt and black pepper. Place in a hot oven and roast until vegetables tender and the chicken breasts well cooked.

Serve:

03 Take to the table hot, serving everything from the skillet pan including all cooking juices. Enjoy with rice, pasta and/or fresh crunchy bread.
Notes
Recipe, images and reel is for 2, however, increase the recipe for more people, as required. Make sure you use a large enough pan to accommodate all the ingredients, as this is a one pot meal!
