Hello Everyone

Unbelievable, it is November tomorrow and OH MY GOODNESS before you know it, it will be December which for many of us living in the Northern hemisphere means cold (most likely wet) weather. With this in mind, and to cheer you all up (plus myself) let’s focus this month on warming ‘comfort’ foods. First up is my take on the classic bread and butter pudding yet made with FIGS and thick slices of fresh brioche, all cooked slowly in a creamy egg custard. OH YES .. sheer comfort in a bowl. YUM.

A cherished national holiday celebrated on the 28th of October each year in Greece, Cyprus, and by Greek communities worldwide.

Ohi Day commemorates the rejection by the Greek dictator Ioannis Metaxas of the ultimatum made by Italian dictator Benito Mussolini on 28 October 1940.

What a privilege and pleasure to be here with these wonderful people to celebrate this unique day.

Hello Everyone

I had my Flu and Covid jab today and as the day moves on I now seek a bowl of COMFORT FOOD. YEP, this will do, a bowl of Broccoli Feta Soup (a simple JULES twist on the classic Broccoli and Blue Cheese Soup).
Simple ingredients and serves 4.

💥Ingredients💥
600g broccoli - approximately 2 medium size, washed and trimmed
60g butter - or 1 tbsp coconut oil
1 large red onion - roughly chopped
2 large cloves garlic - roughly chopped
1 litre stock - made with one or two vegetable stock cubes
200g feta cheese - divided in half
Freshly ground black pepper
Sea salt - only after tasting

💥Instructions💥
Prepare broccoli and other vegetables
Wash, trim and cut into medium size pieces. Roughly chop the onion and garlic.
*Make soup*
Melt butter in a large pan, add onion and chopped garlic. Cook for a few minutes to soften. Add broccoli and cover with enough stock - water with 2 stock cubes added.
Season with black pepper. Cover the pan with a lid and gently simmer until all is soft and tender.
*Blend*
With an electric hand held-blender or food processor, blend smooth or until a coarse puree. Add half the feta, giving another quick blend to infuse. Check the seasoning. Add a wee amount of salt if necessary.
*Serve*
Take to the table hot and serve in attractive individual bowls with the remaining feta crumbled on the top. Enjoy with hot garlic bread.

Sharing an absolute classic today - Garlic Sourdough Baguette. Who doesn’t love a crusty bread oozing in buttery garlic. An absolute favourite of mine and one so delicious with soup or pasta. For this recipe (and ease for you all … and me as I was in a hurry!) I used a store bought sourdough baguette. By the way if you are avoiding dairy use a non dairy alternative 🥰

A classic apple crumble made with Bramley apples and served with custard, ice cream or whipped cream.

💥Ingredients💥
Apple Filling
Approximately 500g Bramley apples - peeled, cored and cubed
1 tsp cinnamon
2 tbsp caster sugar
Knob of soft butter - for oven proof dish
💥Crumble Topping💥 - rub together all ingredients to form rough breadcrumbs
185g plain flour
90g caster sugar
35g soft brown sugar
125g unsalted butter - softened, cubed

💥Instructions💥

QUICK JULES tips A traditional green, sour Bramley apple is the best apple for this pudding classic, however, if not possible to obtain, choose an apple that softens well during cooking such as Jonagold, Pink Lady, Mutsu, or Honeycrisp. Do not be tempted to use a Granny Smith as they do not soften well during cooking. This pudding freezes well and can be made ahead of time, reheated in the oven and served.

With the impending LULU Hypermarket QA ITALIAN celebrations in mind, I share with you today my favourite GO TO Italian meat sauce!! So easy to make and absolutely delicious to eat. Extremely versatile also, as this simple recipe can be used as the meat sauce for lasagne and stuffed cannelloni plus many more delicious Italian meat recipes. By the way, if you ever have any left over, this meat sauce is incredible on baked potatoes smothered in cheese. By the way … traditionally a beef mince is used for this recipe, however, it is also possible to use minced lamb.
Freezes well and keeps for up to 3 days in a sealed container in the fridge.

With home baking still heavily in my mind, I share today a wonderfully dense, rich butter cake recipe from Somerset, United Kingdom, where I had the immense pleasure of residing for 20 years or so. This unique county, south west of London, is very famous for its World Heritage Sites, quality agriculture and of course its famous cider apples, to make a wonderful local drink still to this day called Scrumpy or cider. Traditionally for this cake, cider was used to soak the sultanas or raisins, and I still recommend doing this but if you wish to avoid alcohol use the lemon juice. Freeze as a whole cake after cooking, wrapped in cling film with a layer of tin foil, and will keep like this for up to 3 months.

As many of you will know I have recently been on my travels through Europe in our campervan Muffin 🚐 and when you are on the ‘move’ fast, delicious and of course ultra easy to make FOOD is always the order at the end of the day.
In this very short reel I share how to make Asparagus Spaghetti using only 2 pots, a few ingredients and as you can see a very small gas hob!

Spaghetti
Asparagus - trimmed and sliced
Lots of fresh butter
Loads of grated parmesan cheese.

💥Instructions💥
Boil spaghetti in a pot with water. Melt butter, add asparagus and cook. Lift cooked spaghetti out of the pan, add to the asparagus pan. Smother with grated parmesan. Season sea salt and black pepper. Serve

Hello Everyone 🥰

Sharing today an easy reel showing how to make Coconut Green Beans, which are steeped in spices and cooked in coconut milk. 100% vegan.
Serves 4 / Preparation time: 10 minutes / Cooking time: 20 minutes or so / Stove top cooking

💥Ingredients💥
1 small onion - red or white, chopped
½ tsp turmeric powder
1 large piece of fresh ginger - peeled and roughly chopped
4 cloves of garlic
2 tbsp coconut oil - or quality vegetable oil
2 tsp black mustard seeds
5 curry leaves - fresh or dried
1 tbsp mild curry powder
1 x 400g can coconut milk
1 cinnamon stick
2-3 whole red dried chillies
300g runner beans - string removed and sliced
1 large lemon - juice only
Seasoning to taste - salt and black pepper

💥Instructions💥
MAKE ONION PASTE - in a blender, combine onion, turmeric, ginger, garlic, pinch of salt and 1 tbsp of coconut oil.
💥BEGIN COOKING 💥
Heat remaining oil in a large shallow pan. Throw in the mustard seeds and curry leaves and toast until seeds crackle. Now add the onion paste and cook until sticky. Stir through the curry powder. Pour in the coconut milk, add cinnamon stick and chillies. Bring to a simmer. Add all the green beans. Taste to check the seasoning and add all the lemon juice. Cook until the beans are soft and tender.
💥SERVE💥
Take to the table hot. Enjoy with cooked rice and your favourite breads.

Hello Everyone
If you are a chocolate cake lover as I am, then please check out this reel for my SERIOUSLY DARK CHOCOLATE CAKE with melted chocolate icing. Easy peasy to make and so delicious to eat!
Makes 1 x 20cm cake. 30 mins prep. 45 mins bake @ 180ºC

🛒Ingredients🛒
CAKE BATTER dry
180g plain flour
300g granulated sugar
75g cocoa powder
7g baking soda - or 1¼ tsp
6g vanilla powder - or 1 tsp
CAKE BATTER wet
180g buttermilk - or 170g milk with juice one lemon, mixed
70g vegetable oil
2 eggs - 100g total weight
180g hot black coffee - or hot water
MELTED CHOCOLATE ICING
200g plain chocolate - broken into pieces, melted
200-250ml double cream

💥Instructions💥
Prepare cake tin - Open line a 20cm non stick cake tin with a large piece of baking paper, which fits the base of the tin and comes up above the sides of the tin.
💋Make cake batter 💋- In a large bowl, sift all the dry ingredients bar the sugar. Mix well. Add sugar and now add all the wet ingredients. Beat smooth. Pour batter into the prepared tin. Bake. Cool.
🍫Make melted chocolate icing🍫
Melt chocolate. Remove from the heat, add the cream and blend. When blended, set aside and use this icing when a thick pouring consistency is achieved. Pour over the top of the cake, smooth. Allow to set. Eat or Store

CORIANDER PRAWNS 🍤
Delightful prawns steeped in coriander, loads of garlic and sesame oil, all roasted nicely in a hot wok or large pan. Voila, food is ready and do not forget to mop up all the juices with quantities of fresh bread. I guarantee this recipe is SO SO GOOD!

Deliciously tender, spicy lamb steaks accompanied with a fabulous marinade made of buttermilk and jalapeños. Best served with a pot of plain buttermilk to cool the taste buds, however, equally as delicious when an additional pot of reserved spicy marinade, which is especially tasty for those who love extra spice and heat. This recipe is also perfect for the barbecue should you wish to cook by this method.

Today I am sharing with you a recipe I created especially for my grandson who just loves bananas in any form or size. The recipe is for a NO SUGAR banana cupcake which are full of ripe bananas and topped with a slice. The bananas are so sweet there really is NO need to add sugar but if you prefer a sweeter cupcake, I recommend to add 135g soft brown sugar.

These delightful bakes are the perfect tea time treat for any toddler or banana lover.
