Wok Fried Turkey Noodles
WOK fried minced turkey with Chinese noodles is a delicious one pan meal for all to enjoy. After you have made in once, no need to measure the ingredients just let THE LOVE take over and add as much spice, oil etc as you enjoy to eat.

Ingredients

350g Chinese noodles -- of your choice, cooked

2 tbsp quality vegetable oil- or coconut oil

350g minced turkey

1 small red onion- thinly sliced

3-4 cloves garlic- thinly sliced

Handful of baby mushrooms- washed, sliced

1-2 tsp Chinese mushroom and chilli oil- commercially prepared

3 tbsp light soya sauce
-
1 tbsp dark soya sauce

1 tbsp chilli oil- hot, optional

2 tsp sesame oil
-
2 handfuls of red kale- or green, or spinach, all washed, trimmed and roughly sliced

Freshly ground black pepper- to taste

Garnish

Handful of fresh coriander- roughly chopped

Few spring onions- washed, trimmed, roughly chopped
Instructions

Prepare noodles:

01 Bring a pot of water to the boil and cook the noodles until al dente. Remove from the heat and drain. Set aside for later.

WOK cook:

02 Heat oil in a work until smoking hot. Add mince turkey. Cook well, breaking the mince with a spatula and stir well until well cooked through and slightly crisp. Add chopped onion, garlic and baby mushrooms. Toss well and cook until soft. Add all the leafy veggies and cook until wilted. Add Chinese chilli sauces, soya sauces and sesame oil. Continue tossing all until all ingredients are combined.

03 Take to the table piping hot and garnish with a mixture of coriander and spring onions all roughly chopped.
Notes
I like to use turkey mince for this recipe but minced beef, chicken, pork or beef work equally as well. If you do not have a wok, use a large, heavy flat based pan.
