Ingredients

  • 500g of lean beef
    - cut into chunks
  • 2 fresh chillies (green or red)
    - or ½ tsp chilli powder
  • 4 flat tbsp ghee
    - or rapeseed oil
  • 1 onion
    - finely chopped
  • 3 garlic cloves
    - crushed
  • Spices
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • Large pinch of sea salt
    - optional
  • 2 bay leaves
  • ½ tsp vinegar
  • ½ tsp cinnamon
  • ½ tsp ground cloves
  • ½ tsp ground ginger
  • ½ tsp dried basil
  • ½ tsp freshly ground black pepper
  • ½ tsp cayenne pepper
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp mustards seeds
  • ½ tsp garam masala
  • Other
  • 2 tbsp tomato puree
  • 1 whole lemon
    - juice only
  • 250ml beef stock
    - or water
  • 1 tbsp desiccated coconut

Instructions

  • Begin:
  • 01 Heat the oil in a large saucepan, add the beef and brown for about 5 mins on a medium heat. Add the onions, garlic, chilli, vinegar, salt and all the spices and stir well coating around the beef. Cook for a few minutes altogether to infuse. Meanwhile in a separate bowl combine the tomato puree, stock and lemon juice. Mix well.
  • Assemble all for cooking:
  • 02 Add ½ of the tomato mixture to the beef pan. Stir well whilst this pan is still on a medium heat. Cook until the sauces thickens and is almost dry. Now add the remaining tomato mixture and stir well. If the consistency of the curry is a wee too thick add a little more water to get the consistency you like best.
  • Final cook:
  • 03 Reduce the heat, add the desiccated coconut, cover the saucepan and simmer slowly for approximately 1 hour or so, stirring occasionally. Cook slowly until meat is tender.
  • Serve:
  • 04 When beef is tender serve with freshly cooked basmati rice, popadoms, your favourite Naan bread and Kachumber salad.

Notes

Do not worry too much if you do not have all the spices to add and for a lighter, less heavy rich sauce, omit the stock and just use water. Recipes for Naan and Indian salad available above.
