Smoked Salmon Bites
For all those who love smoked salmon please try this delicious low calorie finger food. A definite slant on the traditional smoked salmon canapés, 100% gluten free with no bread! I will provide quantities for at least 15-20 bites, however, increase the ingredients depending on how many guests you are feeding, allowing at least 4/5 per head as they are very light, low in calories and very moreish!
Ingredients

200g Atlantic smoked salmon

100g black lumpfish caviar

200g thick Labeneh or sour cream

Pack of 6 baby Gem lettuce- washed, trimmed and separated into individual leaves

Fresh lemons- juice and wedges for decoration
Instructions

Prepare ingredients:

01 Wash, trim and spin dry the baby Gem lettuce. Separate the smoked salmon. Cut lemon quarters.

Assemble:

02 Lay lettuce leaves on a large serving plate.

03 On each leaf, lay pieces of smoked salmon.

04 Top each piece of smoked salmon with a small dollop of Labeneh or sour cream.

05 Decorate each with a small teaspoon of black lump fish caviar.

06 Squeeze fresh lemon juice all over each individual leaf.

07 Cover with cling film and keep in the refrigerator or serve immediately to your guests.
Notes
Try to always use the best quality smoked salmon the budget can buy. Often I mix the black and red lump fish row for a really colourful effect. Once assembled keep in the fridge a good hour or two before serving BUT omit the lemon juice, its is best to only add this just before serving. I have also used a firm, Greek plain yoghurt if Labeneh or sour cream is not available (low fat works well too).
