Hello Everyone 🥰

Sharing today an easy reel showing how to make Coconut Green Beans, which are steeped in spices and cooked in coconut milk. 100% vegan.
Serves 4 / Preparation time: 10 minutes / Cooking time: 20 minutes or so / Stove top cooking

💥Ingredients💥
1 small onion - red or white, chopped
½ tsp turmeric powder
1 large piece of fresh ginger - peeled and roughly chopped
4 cloves of garlic
2 tbsp coconut oil - or quality vegetable oil
2 tsp black mustard seeds
5 curry leaves - fresh or dried
1 tbsp mild curry powder
1 x 400g can coconut milk
1 cinnamon stick
2-3 whole red dried chillies
300g runner beans - string removed and sliced
1 large lemon - juice only
Seasoning to taste - salt and black pepper

💥Instructions💥
MAKE ONION PASTE - in a blender, combine onion, turmeric, ginger, garlic, pinch of salt and 1 tbsp of coconut oil.
💥BEGIN COOKING 💥
Heat remaining oil in a large shallow pan. Throw in the mustard seeds and curry leaves and toast until seeds crackle. Now add the onion paste and cook until sticky. Stir through the curry powder. Pour in the coconut milk, add cinnamon stick and chillies. Bring to a simmer. Add all the green beans. Taste to check the seasoning and add all the lemon juice. Cook until the beans are soft and tender.
💥SERVE💥
Take to the table hot. Enjoy with cooked rice and your favourite breads.

If you are a chocolate cake lover as I am, then please check out this reel for my SERIOUSLY DARK CHOCOLATE CAKE with melted chocolate icing. Easy peasy to make and so delicious to eat!
Makes 1 x 20cm cake. 30 mins prep. 45 mins bake @ 180ºC

🛒Ingredients🛒
CAKE BATTER dry
180g plain flour
300g granulated sugar
75g cocoa powder
7g baking soda - or 1¼ tsp
6g vanilla powder - or 1 tsp
CAKE BATTER wet
180g buttermilk - or 170g milk with juice one lemon, mixed
70g vegetable oil
2 eggs - 100g total weight
180g hot black coffee - or hot water
MELTED CHOCOLATE ICING
200g plain chocolate - broken into pieces, melted
200-250ml double cream

💥Instructions💥
Prepare cake tin - Open line a 20cm non stick cake tin with a large piece of baking paper, which fits the base of the tin and comes up above the sides of the tin.
💋Make cake batter 💋- In a large bowl, sift all the dry ingredients bar the sugar. Mix well. Add sugar and now add all the wet ingredients. Beat smooth. Pour batter into the prepared tin. Bake. Cool.
🍫Make melted chocolate icing🍫
Melt chocolate. Remove from the heat, add the cream and blend. When blended, set aside and use this icing when a thick pouring consistency is achieved. Pour over the top of the cake, smooth. Allow to set. Eat or Store

Today I am sharing with you a recipe I created especially for my grandson who just loves bananas in any form or size. The recipe is for a NO SUGAR banana cupcake which are full of ripe bananas and topped with a slice. The bananas are so sweet there really is NO need to add sugar but if you prefer a sweeter cupcake, I recommend to add 135g soft brown sugar.

These delightful bakes are the perfect tea time treat for any toddler or banana lover.

💥Ingredients💥

🍃Herbed Spinach🍃
Generous amount of unsalted butter, say 150g
500g baby spinach leaves
1 flat dessertspoon of mixed herbs - all finely chopped (rosemary, sage, oregano) or less if you prefer!

💥Instructions💥
Steaks 🥩
Marinate steaks & cook steaks - see JOTK recipe or use your favourite. Cook in a pan over high heat in a little olive oil. Allow to rest.
🍃Herbed spinach🍃
In a large pan melt butter. When butter is well melted and bubbling add herbs, toast well in hot butter. Add spinach. Toss well in herb butter until soft and wilted. Serve with rice, spinach and sliced steak on top... plus the steak juices if you like!

Bakes: 24+ biscuits
Preparation time: 15 minutes
Cooking time: 20 minutes
Oven temperature: 170ºC

💥Ingredients💥
Biscuit Dough
250g unsalted butter - softened
3 tbsp condensed milk
200g plain flour - sieved
185g oats
1 tsp baking powder - scant flat level
150g soft dried prunes - no stones, finely chopped

💥Instructions💥
.. Prepare baking trays ..
Use flat baking trays lined with non-stick baking paper. Heat oven.
.. Make biscuit dough ..
Beat butter, condensed milk together until smooth and creamy. Add sugar now if seeking a crunchy cookie. Add oats, sieved flour, baking powder, chopped dried prunes and mix all together to form a firm dough. Omit sugar if preferred but the cookie will be a soft crunch. Using a teaspoon, measure out handfuls and roll into balls using the palms of your hands.
.. Assemble to bake ..
Place on a baking tray. With a warmed, slightly wet fork flatten out the biscuit, leaving indentations in the dough.
.. Bake ..
Place in the oven and bake until golden. Best to leave to cool on the tray before transferring to a cooling rack for the final rest and eventual storage in an airtight container or biscuit jar.

My reel and recipe today is for a delicious mushroom stroganoff . 100% meat free using only quality mushrooms, extra virgin olive oil and plain Greek yoghurt. For those seeking 100% vegan I recommend to substitute plant based substitutes for the butter and yoghurt. Definitely and EASY PEASY supper. Note recipe is for 2 as only hubby and I eating, so double up for 4! Finally if the sauce splits DO NOT WORRY!

Serves 2
Preparation time: 10 minutes
Cooking time: 20 minutes
Stove top cooking

*Ingredients*
1 tbsp extra virgin olive oil
1 red onion - roughly chopped
50g unsalted butter
2 garlic cloves - thinly sliced
300g button mushrooms - thickly sliced
3 tbsp plain Greek yoghurt
1 large tsp Dijon mustard
½ lemon - juice only
Few leaves fresh oregano - or pinch of dried
Wild rice

*Instructions*
Melt butter in oil.
Add onions and soften. Add garlic and chopped fresh oregano leaves.
Add mushrooms. Cook on a high heat, stirring often for about 5 minutes.
Reduce to a low heat. Add Greek yoghurt and mustard. Mix well. Add lemon juice.
Season to taste. Cook slowly on low heat for 5 minutes or so, stirring gently.
Serve hot with cooked wild rice.

When it comes to a delicious nibble (snack) my ideal are these delightful Smoked Salmon and Pickled Cucumber Pinwheels. Perfect when entertaining friends as they look so attractive. I like to use a firm commercially bought wholemeal brown loaf, chill in the freezer until firm, ALL crust removed and sliced in long, vertical thin slices. Pre-freezing the bread ahead of time firms the loaf and enables you to slice it more easily. Keep the trimmed crusts for your morning toast.

JULES Luxury Beef in Red Wine
A classic JULES take on the traditional French ‘beef in red wine’ but with a Greek twist by the addition of the unique and revered Metaxa brandy. So easy to make as only one pot is used and slowly cooked in the oven until the meat is tender and cooked to unctuous perfection. For those avoiding alcohol just use RED GRAPE JUICE and omit the wine and brandy (and of course NO flambé)

Serves 6
Preparation time: 30 minutes
Cooking time: 2 hour +
Oven temp : 150ºC

💥Ingredients💥
600g beef - shin or skirt, cubed
3 tbsp flour - seasoned with lots of black pepper and sea salt
2 tbsp Extra virgin olive oil
25g butter
2 red onion - thinly sliced
6 cloves garlic - finely chopped
1 large bayleaf
400ml red wine
125-150ml brandy - a heavy glug
300ml beef stock - optional
250g mushrooms - quartered
2-4 carrots - peeled and cut into bite sized pieces
Handful of celery stalks and leaves - sliced thinly
Fresh bouquet garni of thyme and rosemary

💥Instructions💥
*Step 1
Cover beef in seasoned flour.
*Step 2
Heat oil in an oven proof pan, add butter and melt. Add beef and colour. Remove. Set aside.
*Step 3
Add onions and garlic, soften. Add mushrooms. Stir well and cook.
*Step 4
Add browned beef and juices. Add brandy - and use a match to flambé. WATCH OUT THE FLAMES 🔥 DONT BITE 😜 Add red wine and again flambé. Add carrots and celery plus bouquet garni. Bring to a simmer.
*Step 5
Cover and bake in the oven for 2 hours until tender.
*Serve
Voilà and enjoy, piping hot with creamy mashed potato.

*MY tip💋 For a less robust red wine gravy, mix beef stock with the red wine and brandy.

Before I move on to posts of delicious, easy recipes I will share this short reel of my recent JULES ON TOUR 2024 in Muffin the camper van 🚐🚐 with family and my dear Woofa Queenie 🐶❤️....and Hubby of course! In brief it was a flying visit through France heading towards warmer climes of Southern Italy. I let the pics do the talking but OH YES, a great trip with some wonderful eating...
