Prawns with Orzo and Feta

Prawns with orzo and feta makes an easy supper or light lunch dish. Can be made ahead, kept chilled and re-heated in the oven or served immediately.

Ingredients

  • 150g prawns
    - fresh or frozen, defrosted
  • 100g feta
    - cubed
  • 400g orzo pasta
    - cooked
  • 60g butter
  • 1 lemon
    - juice only
  • Handful of fresh parsley
    - chopped
  • Seasonings
    - pinch salt and lots of black pepper

Instructions

  • Cook orzo:
  • 01 Bring a large pot of water to a boil and cook pasta according to the package instructions. Drain, rinse with cold water and set aside.
  • Prepare prawns:
  • 02 Meanwhile, pat the prawns dry with paper towel. Defrost if frozen.
  • Cook prawns:
  • 03 Melt half of the butter in a large, non-stick pan on medium heat. Add prawns and toss well in the butter and quickly cook. Remove from the pan and set aside. If using precooked prawns still do this.
  • Assemble all ingredients to serve or oven bake:
  • 04 In the same pan, add the remaining butter and melt until it just starts to brown. Add orzo feta cheese, chopped parsley, check the seasoning and lots of fresh lemon juice. Mix everything well and turn off the heat.
  • Serve:
  • 05 Turn into a lightly buttered or oiled baking dish. Top with the buttered prawns and serve.
  • OR for REHEATING
  • 06 Allow to become cool before covering with a lightly oiled tin foil lid. Place in the fridge until required.
  • Oven bake to reheat:
  • 07 Place in a hot oven with its tin foil lid and reheat for 20-30 minutes. Enjoy on its own or with your favourite salad or veggie.

Notes

I used a packet of pre-cooked prawns for this recipe, however, fresh green raw prawns (peeled and deveined) are also suitable. BE CAREFUL when adding salt, taste the feta first as this cheese can often be quite salty to the tastebuds.
