Pecan Nut Plum Crumble
Fruit crumble puddings are always much loved, especially by the family. This is a basic fruit crumble recipe however, a slight twist as I am using plums and pecan nuts with crystalised ginger but if the ginger is not for you, leave it out of the recipe.

Ingredients

800g ripe plums

1 cup apple juice

2 tbsp crystallised ginger- finely chopped (optional)

Crumble Mix

125g butter- softened
-
100g sugar
-
60g rolled oats
-
120g plain flour
-
75g pecan Nuts
Instructions

Prepare fruit filling:

01 Wash fruit, cut in half and remove the stone. Place in a pan with the apple juice and gently simmer until soft for approx 20 minutes. Remove from the heat and, if using crystallised ginger add now. Place in a buttered baking dish.

Prepare crumble:

02 Place all ingredients in a food processor and pulse until mixture clumps together.

03 Dot dough all over the plums allowing some fruit to show through.

04 Bake in a moderate oven, 150ºC, for 45 minutes.

05 Serve hot or cold with oodles of custard or fresh cream.
Notes
Can use either black or red plums for this dish – or even both (tastes great!). The crystallised ginger is optional – not everyone’s favourite. The above crumble mix can be used as a topping on other fruits, such as apple, apricots, strawberries and blueberries.
