Fudgy Cream Cheese Brownies
A sticky cream cheese brownie recipe shared with me by the wonderful Michelle, who during my early years in Doha, shared with me many ‘computer training’ moments in our office literally under the staircase!

Ingredients

Chocolate batter

1/2 cup plain flour

1/2 tsp baking powder

200g plain chocolate

90g butter
-
2 eggs

3/4 cup caster sugar

1 tsp vanilla essence

Cream Cheese Batter

125g cream cheese
-
60g butter
-
1/4 cup caster sugar
Instructions

Chocolate batter:

01 In a bowl sift flour and baking powder. Melt chocolate and butter, add vanilla. In a separate bowl beat eggs with sugar until thick. Add melted chocolate mixture, mix well and finally flour and baking powder. Blend together well.

Cream cheese batter:

02 In a separate bowl from the chocolate batter, place all ingredients into a bowl and beat together until smooth.

Assemble to bake:

03 Spoon fudgy chocolate batter into baking tin. Spoon cream cheese batter all over the top, and SWIRL together.

04 Bake until firm to the touch but with a wobbly centre.
Notes
I recommend an oblong tin to bake these sticky morsels, size 30cm. Well greased and lined with baking paper. Do not be tempted to over cook - delicious slightly under done, with a gooey fudge centre. Always tastes best when eaten the following day.
