Lemon Chicken Bake

At the end of a weekend, I always want something to eat which requires very little thought and stress. This basic lemon roasted chicken ticks all the boxes – and if you wish to add other favourite vegetables such as fennel, sweet potatoes throw them in!

Ingredients

  • 1 large fresh chicken
    - fat trimmed and cut in half
  • 1 bulb garlic - broken into cloves
    - peeled
  • 2 large lemons
    - peel removed & juice
  • 4 bay leaves
  • 2 sticks cinnamon bark
    - broken
  • Largest red onions can find
    - peeled and trimmed
  • 4 tbsp coconut oil
    - (liquid)
  • Freshly ground black pepper
  • Sea salt

Instructions

  • 01 Oven temperature : 350ºF/180º/Gas 4
  • 02 Prepare chicken - remove fat, excess skin and cut in half.
  • 03 Throw ALL ingredients into a large roasting tin, top with fresh lemon juice and coconut oil. Season well and mix by hand to make sure all lightly coated with the lemon juice and coconut oil.
  • 04 Roast in a moderate hot over for minimum 1 hour or until chicken golden brown and vegetables soft.
  • 05 Serve hot with boiled rice, favourite potato mash or leave plain with extra fresh lemon.

Notes

This recipe is a new take on the traditional Roast Chicken. Its not complicated and delicious to eat.
