Jules Breakfast Muesli

I share with you now Jules Breakfast Muesli – my number one breakfast, and definitely a healthy way to start the day. I always soak my muesli over night in water to change the consistency to what I consider to be a more palatable ‘porridge like texture’ which is definitely easier on the digestion.  I always add flaxseeds for that extra ‘constitutional’ assistance. If you do not have time to make your own muesli, use a quality, commercially prepared brand but please, watch out for those hidden ingredients such as added sugar and milk powders as they are so not necessary!

Ingredients

  • Muesli
  • 280g rolled oats
  • 280g rolled spelt
  • 140g pumpkin seeds
  • 140g sunflower seeds
  • 140g golden raisins
  • 60g dried unsweetened coconut flakes
  • 100g flaxseeds
  • 280g chopped dates
  • 280g dried bananas
    - chopped
  • 280g dried apricots
    - chopped
  • 1 tablespoon ground cinnamon
  • Dash of nutmeg
  • Nuts (optional)
  • 60g walnuts
    - chopped
  • 60g almonds
    - chopped
  • 60g brazil nuts
    - chopped
  • Liquid for breakfast
  • Cold water or selected milk
    - soya, almond, oat, coconut, goats milk or cows milk
  • Topping
  • 1 tbsp plain yoghurt
  • Sprinkling of additional cinnamon powder

Instructions

  • Muesli:
  • 01 Take a large mixing bowl, add all the ingredients and mix well together. Store in a large airtight container.
  • Morning bowl:
  • 02 The night before fill individual breakfast bowls with muesli or one large family bowl.
  • 03 Add enough water or selected milk to cover PLUS a wee bit more (muesli will soak it all up overnight)
  • 04 Cover the top with cling film, tin foil or a china saucer to create a lid.
  • 05 Leave in the refrigerator over night.
  • 06 In the morning, remove the cover, add extra liquid in the form of a selected milk, top with yoghurt and cinnamon and ENJOY! Add extra seeds for additional energy and crunch. Serve separately or as one large bowl.

Notes

I always leave the muesli to soak overnight in either water, soya milk, rice milk, almond milk or for real milk lovers, add cows or goats milk. In the winter time I give the muesli a quick heat up in the microwave as it warm and comforting, and in the summer or warmer weather, enjoy with additional milk of your choice, topped with yoghurt and a sprinkling of cinnamon plus fresh fruit if I wish for a change. Do add your favouright seeds (pumpkin or sunflower) for an additional crunch and of course, nutritious fix.
