Homemade Pokies
During my years living in New Zealand I was introduced to what must be one of the best homemade biscuits in the world … traditionally known as a Hokey Pokey biscuit or Pokies as my children liked to call them when they were growing up.
Best always stored in an airtight container where they will last for up to a week …however, as they are so good, I bet you eat them all before the days out!

Ingredients

125g butter

64g caster sugar

1 tbsp golden syrup

1 tbsp milk
-
192g plain flour- sifted

1 tsp baking soda
Instructions

Prepare baking trays:

01 Line flat baking trays with non stick baking parchment.

Biscuit mixture:

02 In a saucepan melt butter, sugar, golden syrup and milk. Heat mixture to nearly boiling, stirring all the time.

03 Remove from the heat and allow mixture to cool to lukewarm.

04 Sift flour and baking soda, add to the cooled butter mixture. Stir well.

05 Once the mixture firms up, roll tablespoons of the mixture into balls and place on prepared flat baking trays.

06 Flatten with a floured fork.

07 Bake in the oven until golden brown. Only remove from the baking tray when firm. Cool on a wrack.
Notes
The art to these caramel tasting biscuits is to only shape into balls when the biscuit mixture is cool enough to handle and appears firm on the tray. I also like to cook these biscuits slightly longer than the recipe dictates as I prefer to eat them very crisp. The size you make can vary, they can be large or small. Just go with what you enjoy best.
