Gabooli Spice

This Gabooli Spice is the basis to the traditional Indian chicken recipe Gabooli Chicken; a highly fragrant and aromatic chicken roast with spiced rice    Chicken Gabooli

Ingredients

  • 125g coriander seeds
  • 125g cumin seeds
  • 60g black pepper corns
    - whole
  • 30g spiced cloves
    - whole
  • 30g cardamon pods
  • 5-6 cinnamon sticks
    - broken in half or quarters depending on size

Instructions

  • 01 In one very large frying pan toast all the spices for at least 10-15 minutes to release the aromas. DO NOT toast too quickly, take your time, stirring constantly to toast evenly and prevent burning. If you prefer, it is acceptable to toast in individual batches.
  • 02 Then place all spices in a food processor and grind to a powder. This can take longer than you think.
  • 03 Store in an airtight container or jam jar until required.

Notes

Take care not to burn the spices during the toasting stage. This will make the end result bitter – especially watch out for the cumin seeds as they can ‘catch’ quickly, and do remember to grind all the spices well – you do not want to break your teeth when eating the final dish. Best to use natural dried cinnamon bark, as you want the type which is slightly papery to the touch, as this way they are easier to grind.
