Fruity Peach Granola

Fresh fruit and granola is an excellent ‘healthy way’ to start the day. Definitely a breakfast favourite of mine. This recipe makes a very quick granola but if you are more of a purist or wish to make a large batch to enjoy throughout the week, try my Jules homemade granola – recipe link  Jules Granola

Please ignore the granola part of this recipe, make the Jules Granola and then follow the recipe from instruction 3.

Ingredients

  • Quick Granola
  • 1 tbsp coconut oil
  • 1 tsp cinnamon
  • 150g oats
  • 50g sunflower seeds
  • 50g pumpkin seeds
  • 2 tbsp runny honey
    - alternative use maple syrup
  • Filling
  • 150g fresh peaches
    - skin removed and chopped
  • 4 tbsp thick Greek style yoghurt
    - or non dairy, plain yoghurt

Instructions

  • Make quick granola:
  • 01 Melt coconut oil and cinnamon in a large pan over a gentle heat. Add oats, seeds and honey, mixing well. Toast all the ingredients in the pan, stirring well until toasted brown. Tip onto a baking sheet to cool.
  • Prepare fresh fruit:
  • 02 Remove skin and stones from peaches. Slice or chop.
  • Assemble:
  • 03 Take individual serving glasses, spoon fresh peach on the bottom and then add alternate layers of yoghurt, granola and more peach. Finishing with a granola topping.
  • 04 Serve immediately or cover and place in the fridge until required.

Notes

This recipe uses a very quick granola bake, which is good if you are in a hurry. It is also possible to change the fruit and use any soft fruit such nectarines, strawberries, raspberries and blueberries. These breakfast fruities can also be made and assembled the night before, covered and kept in the fridge, but do expect the granola to soften over night.
