Two Cheese Dip with Bread Sticks
A light, creamy dip gently flavoured with coriander and a touch of spring onion. A useful party dip if entertaining a large group.

Ingredients

Dip

250g ricotta

250g feta cheese- low salt and soft

2 spring onions- trimmed, cleaned and roughly chopped

Small handful of fresh coriander- roughly chopped

75g pecan nuts- optional

3 tbsp extra virgin Olive oil

Freshly ground black pepper

Bread sticks

1 large French loaf- cut into long length sticks

Extra virgin olive oil
Instructions

Prepare bread sticks:

01 Divide loaf into equal sized pieces. Cut in half and then into long length sticks. Place on a baking tray, drizzle with olive oil and toast in a hot oven until crisp and golden (approx 15-20 minutes).

Prepare dip:

02 Place all ingredients in a food processor and pulse smooth.

03 Turn into a serving bowl. Drizzle extra olive oil over the top and garnish with black pepper and few sprigs of coriander.

04 Serve with toasted bread sticks and same sized pieces of carrots.
Notes
Try to use a mild, low salt creamy feta as too much salt will ruin this dish and omit the nuts if you prefer. Dip can be made ahead and stored in the fridge until required. Serve with bread sticks and carrots, or actually any vegetable of your liking -such as cucumbers, peppers and celery.
