Feta Baked Eggs

Feta and eggs baked together in a hot oven, when cooked mixed with a fork until scrambled and creamy. A delicious sunshine breakfast.

Ingredients

  • Extra virgin olive oil
    - to smear inside and around baking dish
  • 2 large organic eggs
    - cracked
  • 100g feta cheese 
  • Slices of sourdough toast
  • Freshly ground black pepper
    - to taste
  • Decorate
  • Sprig of basil
    - optional

Instructions

  • Prepare baking dish:
  • 01 Lightly smear oven proof baking dish with a small amount of extra virgin olive oil.
  • Assemble to bake:
  • 02 Crack eggs into the lightly oiled baking dish. Add feta.
  • Bake:
  • 03 Place in a hot oven and cook for 15 minutes or until the eggs have set and the feta soft. Remove from the oven, mix together with a fork to form a creamy consistency. Season with black pepper.
  • Serve:
  • 04 Spoon the scrambled egg and feta mixture onto toasted sourdough and enjoy. Garnish with a sprig of fresh basil.

Notes

NO need to add salt as the feta will provide this. Recipe is for one person, so increase quantities for many.
