Melted Chocolate Icing
Melted chocolate icing is a quick and easy to make rich, dark chocolate icing which will run over the top of your cake in attractive ripples. The recipe is suitable for covering a one tier cake with a rich, deep thick icing, however, if a 2 tier cake is baked with a chocolate icing filling, then this quantity will suffice.

Ingredients

200g quality dark plain chocolate- broken into pieces, melted

300ml double cream

1-2 tsp icing sugar- (if required)
Instructions

Step 1:

01 In a bowl over hot water melt the chocolate. Remove from the heat, add the cream and blend smooth. Check taste, and add icing sugar if required.

02 When blended set aside and use this icing when at a thick pouring consistency is achieved.

Usage:

03 Fill or pour over the top of cakes. Allow to run over the cake and form ripples..
Notes
Use a quality dark chocolate, however, if too bitter it is OK to add a small tsp of icing sugar. Chocolate can also be flavoured with cinnamon and coffee. Be also careful not to over temper the chocolate (over heat/cook).
