Easy Almond Couscous
I always love making couscous as its so easy to make, and extremely delicious to eat. Traditionally always served with a meat or vegetable tagine, however, a great family filler at any BBQ or group gathering.

Ingredients

275g medium couscous

100g flaked almonds- toasted

1 x chicken stock cube

500 ml boiling hot water

Sea salt and coarsely ground black pepper
Instructions

01 Dissolve stock cube in the boiling water.

02 Place couscous in a large heatproof bowl, add stock stirring well. Cover bowl with a cloth and leave to rest for 5 minutes.

03 When couscous is ready mix in the slivered almonds and seasonings (to taste).

04 Serve hot or cold garnished with extra toasted almonds and thin slices of red onion.
Notes
The art to a great couscous is to allow the grains to soak up all the stock without being disturbed, hence it is important to leave it to sit in a covered bowl before serving. Once the liquid is all soaked up, use a fork to break it apart.
