Crunchy Broccoli Salad
Raw and crunchy, a real palate pleasing broccoli salad with a creamy dressing.
This healthy, delicious salad was passed on to me by my dear Canadian friend Leslie who swears it’s a winner at any dinner party. She actually never measures anything and often literally throws it all together and recommends the longer it is left to mellow the better it tastes.
Serves 6
10-15 minutes
Ingredients

2 large heads of raw broccoli (or 4 small)

125g toasted pine nuts

125g raisons

125g raw almonds- finely chopped

1 small bunch spring onions- thinly sliced

100g chopped turkey bacon- cooked

Dressing

250g mayonnaise

2 tbsp cider vinegar

Salt & pepper- to taste
Instructions

Prepare all vegetables:

01 Wash and trim broccoli; break into bite size florets. Thinly slice spring onions.

02 Finely chop turkey bacon; cook and cool.

Prepare the dressing:

03 Combine all ingredients in a bowl and season to taste.

Assemble:

04 Place the broccoli and other ingredients into a large bowl. Pour the dressing and mix well.

05 Cover and allow flavours to infuse several hours before serving either in one large bowl or separate individual bowls.
Notes
A great salad to make when either time is short or you have much to do, as it can be prepared well in advance. Lastly, if you are watching calories do substitute the mayonnaise with a firm, low fat yoghurt.
