Peanut Chicken Wings

Delicious barbecued or grilled chicken wings with a very easy spicy peanut sauce. A perfect combination when entertaining friends or family.

Ingredients

  • 18 chicken wings
    - 3 per person
  • Marinade
  • 6 tbsp dark soya sauce
  • 2 tbsp tarragon vinegar
  • 2 tbsp runny honey
  • Spicy Peanut Sauce
  • 250g peanut butter
    - smooth or crunchy
  • 2 cloves of garlic
    - crushed
  • 1 tbsp grated fresh ginger
  • 1 tsp turmeric powder
  • 1 tsp Tabasco sauce
    - or hot sauce
  • 1 tbsp sesame oil
  • 4 tbsp soya sauce
  • 2 tbsp runny honey
  • 1 lemon
    - juice only
  • 125ml cold water

Instructions

  • Prepare marinade for chicken:
  • 01 Using a large bowl mix all the marinade ingredients. Add the chicken wings and toss well in the marinade. Cover and refrigerate for minimum of 30 minutes.
  • Make the peanut sauce:
  • 02 Place all the ingredients into a food processor and blend to a smooth paste.
  • 03 Pour into a bowl, cover and leave at room temperature for a minimum of 30 minutes to all the flavours to blend. Set aside.
  • Cook chicken wings:
  • 04 Using either a hot barbecue or grill, cook the chicken wings turning frequently until golden brown all over, well cooked and nicely crisp.
  • 05 Serve hot with the spicy peanut sauce.

Notes

I highly recommend marinating the chicken wings overnight for the best flavour, and as the peanut sauce is very easy to make it can be made ahead of time (will last up to 4 days when kept in the fridge) but enjoyed best when served at room temperature.
