Chewy cookies sweetened by a touch of condensed milk. The perfect chewy biscuit crunch accompaniment to any morning cup of coffee or afternoon tea. Low in sugar but do add 60g for a crunchier munch. The dried prunes give a healthy chewy texture to the cookie.

Ingredients

  • Biscuit Dough
  • 250g unsalted butter
    - softened
  • 3 tbsp condensed milk
  • 200g plain flour
    - sieved
  • 185g organic oats
  • 1 tsp baking powder
    - scant flat level
  • Dried Fruit
  • 150g soft dried prunes
    - no stones, finely chopped 

Instructions

  • Prepare baking trays:
  • 01 Use flat baking trays lined with non-stick baking paper. Heat oven. 
  • Make biscuit dough:
  • 02 Beat butter, condensed milk together until smooth and creamy. Add sugar now if seeking a crunchy cookie. Add oats, sieved flour, baking powder, chopped dried prunes and mix all together to form a firm dough. Omit sugar if preferred but the cookie will be a soft crunch.
  • Assemble to bake:
  • 03 Using a teaspoon, measure out handfuls and roll into balls using the palms of your hands.  Place on a baking tray. With a warmed, slightly wet fork flatten out the biscuit, leaving indentations in the dough. 
  • Bake:
  • 04 Place in the oven and bake until golden. Best to leave to cool on the tray before transferring to a cooling rack for the final rest and eventual storage in an airtight container or biscuit jar. 

Notes

Try not to be tempted to pack the raw cookie dough balls too close to each other on the baking tray, as they do spread slightly during cooking, and if you prefer a larger cookie, use a dessertspoon rather than the recommended teaspoon.
