Char Grilled Lamb Steaks
Deliciously tender, spicy lamb steaks accompanied with a fabulous marinade made of buttermilk and jalapeños. Best served with a pot of plain buttermilk to cool the taste buds, however, equally as delicious when an additional pot of reserved spicy marinade, which is especially tasty for those who love extra spice and heat.
This recipe is also perfect for the barbecue should you wish to cook by this method.

Ingredients

4 large lamb steaks- approx 1.5kg total weight

Spicy Jalapeños Marinade

600ml buttermilk- with 100ml removed to serve as a plain dip

2 fresh orange or green jalapeños- halved, seeds removed and chopped
-
2 tsp bottled green jalapeños- drained and chopped
-
1-2 cloves garlic
-
1 small red onion- chopped
-
2 green spring onions- trimmed and chopped

1 lemon- rind and juice
-
Large handful of coriander leaves

For Frying

Rapeseed oil- for griddle

Garnish
-
Fresh broccolini- to be lightly cooked on the griddle

Sliced jalapeños

100 ml plain buttermilk- served in a pot, to be served as a sauce

Extra fresh coriander leaves
Instructions

Make spicy buttermilk marinade:

01 In a small bowl add 500ml of buttermilk with 100ml removed for the plain sauce dip, fresh jalapeños and those drained from the jar, garlic, lemon rind with juice, fresh coriander, chopped onion and seasoning salt and pepper. Process until combined - see images #2 & #3.

Marinate lamb steaks:

02 Place the lamb steaks into a large bowl or late on a plate. Pour over the spicy marinade, cover and set aside in the refrigerator for 1 hour to marinate - see image #4.

Griddle cook:

03 Remove the steak from the marinade. Oil lightly the griddle and heat. Cook for 6 minutes, then turn and cook for a further 6 minutes for medium or until cooked to your liking - see image #5. Cook the broccolini also.

Serve:

04 Take to the table plated with the broccolini and either the reserved spicy marinade or plain buttermilk. Decorate with coriander leaves and extra jalapeños to liven up your dish.
Notes
If you are unable to buy buttermilk I recommend to make your own - mix 600ml milk with the juice of 1 LARGE lemon (or 2 medium size). Leave to sit and thicken for 5 mins after which you will have homemade buttermilk.
