Strawberry plum crumble is a delicious autumn frui

Strawberry plum crumble is a delicious autumn fruit crumble pudding. Delicious hot or cold with ice cream, custard or simple pouring double cream. Serves 4 and takes no time to make and bake. If you can’t get fresh use tinned soft fruits!

🍁Ingredients🍁
Soft Fruit Filling
4-6 ripe autumn plums - stones removed, chopped
1 punnet of fresh strawberries - hulled and halved
1 orange - juice only
1 tbsp caster sugar - optional
💥Oat Crumble💥
1 tbsp plain flour
90g rolled oats
100g Demerara sugar
90g butter - softened + extra for dish
1 tsp cinnamon

💥Instructions💥
Lightly butter baking dishes.
🔻Prepare soft fruits🔻
Chop all soft fruits into bite sized pieces. Pile into baking dishes. Cover with a sprinkling of caster sugar (optional) and juice from 1 orange.
🔻Make Oat Crumble🔻
In a bowl mix oats, Demerara sugar and flour. Add softened butter and with a fork mix well to form chunky breadcrumb-like pieces. Tip the oat crumble mixture all over the top of the chopped soft fruits.
Bake until golden.
Enjoy hot or cold with ice cream, custard or pouring cream.

Hello Everyone

Sharing a fabulous, easy supper dish of chicken and pan fried green veggies. So easy and delicious you will love it. Recipe is for 2 but double the quantity for 4. Enjoy.

💥Ingredients 2 persons💥
2 fresh chicken breasts - flattened to form escalopes
1 lemon - juice only
Touch of sea salt
Generous grind of black pepper
Sprigs of fresh sage
Extra virgin olive oil
Generous knob of unsalted butter
🌱Veggies🌱
1 small onion - thinly sliced
1 garlic - thinly sliced
Generous handful of bok choy - sliced
Handful of broccoli - thinly sliced

💥Instructions💥
Flatten chicken breasts between 2 pieces of non-stick paper with a mallet to form escalopes. Season, add olive oil and lemon juice. Melt butter and oil in a pan. Add sage, add chicken and cook on both sides for several minutes (a total of 7 minutes altogether). Remove to a tray and place chicken into a warm oven. Now cook veggies. Lower heat, add veggies. Cook and when ready serve all with fresh cooked rice or potatoes.

With the flavours of my beloved Greece still fresh in my mind, I share today one of my favourite recipes which goes so well with baked fish, and when served like this it becomes traditionally a Greek version of our UK fish and chips! Anyways, Skordalia is basically a comforting garlic and potato dip. Lovely with fish and equally as tasty when a dip served with raw vegetables, also good with roasted or grilled meats.

Hello Everyone

I had my Flu and Covid jab today and as the day moves on I now seek a bowl of COMFORT FOOD. YEP, this will do, a bowl of Broccoli Feta Soup (a simple JULES twist on the classic Broccoli and Blue Cheese Soup).
Simple ingredients and serves 4.

💥Ingredients💥
600g broccoli - approximately 2 medium size, washed and trimmed
60g butter - or 1 tbsp coconut oil
1 large red onion - roughly chopped
2 large cloves garlic - roughly chopped
1 litre stock - made with one or two vegetable stock cubes
200g feta cheese - divided in half
Freshly ground black pepper
Sea salt - only after tasting

💥Instructions💥
Prepare broccoli and other vegetables
Wash, trim and cut into medium size pieces. Roughly chop the onion and garlic.
*Make soup*
Melt butter in a large pan, add onion and chopped garlic. Cook for a few minutes to soften. Add broccoli and cover with enough stock - water with 2 stock cubes added.
Season with black pepper. Cover the pan with a lid and gently simmer until all is soft and tender.
*Blend*
With an electric hand held-blender or food processor, blend smooth or until a coarse puree. Add half the feta, giving another quick blend to infuse. Check the seasoning. Add a wee amount of salt if necessary.
*Serve*
Take to the table hot and serve in attractive individual bowls with the remaining feta crumbled on the top. Enjoy with hot garlic bread.

A classic apple crumble made with Bramley apples and served with custard, ice cream or whipped cream.

💥Ingredients💥
Apple Filling
Approximately 500g Bramley apples - peeled, cored and cubed
1 tsp cinnamon
2 tbsp caster sugar
Knob of soft butter - for oven proof dish
💥Crumble Topping💥 - rub together all ingredients to form rough breadcrumbs
185g plain flour
90g caster sugar
35g soft brown sugar
125g unsalted butter - softened, cubed

💥Instructions💥

QUICK JULES tips A traditional green, sour Bramley apple is the best apple for this pudding classic, however, if not possible to obtain, choose an apple that softens well during cooking such as Jonagold, Pink Lady, Mutsu, or Honeycrisp. Do not be tempted to use a Granny Smith as they do not soften well during cooking. This pudding freezes well and can be made ahead of time, reheated in the oven and served.

With the impending LULU Hypermarket QA ITALIAN celebrations in mind, I share with you today my favourite GO TO Italian meat sauce!! So easy to make and absolutely delicious to eat. Extremely versatile also, as this simple recipe can be used as the meat sauce for lasagne and stuffed cannelloni plus many more delicious Italian meat recipes. By the way, if you ever have any left over, this meat sauce is incredible on baked potatoes smothered in cheese. By the way … traditionally a beef mince is used for this recipe, however, it is also possible to use minced lamb.
Freezes well and keeps for up to 3 days in a sealed container in the fridge.

With home baking still heavily in my mind, I share today a wonderfully dense, rich butter cake recipe from Somerset, United Kingdom, where I had the immense pleasure of residing for 20 years or so. This unique county, south west of London, is very famous for its World Heritage Sites, quality agriculture and of course its famous cider apples, to make a wonderful local drink still to this day called Scrumpy or cider. Traditionally for this cake, cider was used to soak the sultanas or raisins, and I still recommend doing this but if you wish to avoid alcohol use the lemon juice. Freeze as a whole cake after cooking, wrapped in cling film with a layer of tin foil, and will keep like this for up to 3 months.

Hello Everyone
As many of you will know I have recently been on my travels through Europe in our campervan Muffin 🚐 and when you are on the ‘move’ fast, delicious and of course ultra easy to make FOOD is always the order at the end of the day.
In this very short reel I share how to make Asparagus Spaghetti using only 2 pots, a few ingredients and as you can see a very small gas hob!

💥Ingredients💥
Spaghetti
Asparagus - trimmed and sliced
Lots of fresh butter
Loads of grated parmesan cheese.

💥Instructions💥
Boil spaghetti in a pot with water. Melt butter, add asparagus and cook. Lift cooked spaghetti out of the pan, add to the asparagus pan. Smother with grated parmesan. Season sea salt and black pepper. Serve
