Caramelised Walnuts

Walnuts caramelised in a pan with sugar and butter until toasted, sweet and crunchy. Enjoy as a sweet confectionary or as a delicious flavouring or topping in homemade ice cream, cakes and desserts.

Ingredients

  • 125g walnuts
  • 50g sugar
    - granulated
  • 1 tbsp golden brown sugar
  • 60ml water
  • 14g butter
    - unsalted

Instructions

  • Step ONE:
  • 01 Place a piece of non stick paper onto a flat baking try.
  • Step TWO:
  • 02 Add all ingredients to a medium sized non-stick pan.
  • Step THREE:
  • 03 On a high heat melt and mix all ingredients and cook for 4 minutes. Reduce heat to a medium heat and stirring continuously for an additional minute or until all the moisture evaporates. The walnuts will darken, become glossier and begin to clump together.
  • Step FOUR:
  • 04 Tip the nuts bubbling onto the prepared baking tray. Spread the nuts in a single layer. to cool and when at room temperature break them apart with your fingers.
  • USE & STORAGE:
  • 05 Enjoy or use immediately when cold and best stored in a sealed container, kept in a cool place.

Notes

It is important to make sure that all the liquid is evaporated before removing from heat. Otherwise, any remaining moisture might cause the walnuts to become sticky and compromise their intended crunchiness.
