Nut Granola

Breakfast nut granola, packed with oats, seeds and dried fruit. Delicious when combined with your favourite yoghurt, dairy or plant based milk.

Ingredients

  • Dry
  • 500g organic oats
  • 200g sunflower seeds
  • 400-500g mixed fruit and nut mix
    - walnuts, almonds, sultanas and cranberries
  • Wet
  • 2-3 tbsp raw runny honey
  • 100g butter
    - or plant based alternative
  • 600ml cold water

Instructions

  • Dry mix:
  • 01 In a large bowl mix together all the dry ingredients.
  • Wet mix:
  • 02 Using a small pan melt butter and honey. When melted add water. Heat until a low boil. Remove from heat.
  • Assemble together:
  • 03 Make well in centre of dry ingredients and pour in all the wet. Mix well, breaking the mixture into granola sized pieces.
  • Bake:
  • 04 Tip into a large baking tin lined with non stick paper. Place in oven and bake until hard until you have traditional granola pieces.
  • Storage:
  • 05 Allow to cool and store in an airtight container or large glass jar with tight fitting lid.

Notes

I use butter in this recipe but it is possible to use coconut oil or a favoured, light oil. Plant based alternatives will work well also. Honey is the sweetener, use more or less to your tastebuds.
