Cambozola Steak

Who does not love a steak and cheese sandwich! Try this recipe on the BBQ or cook inside under a hot grill. Easy, cheesy and very delicious. Choose a good crusty bread and either enjoy fresh or slightly toasted – if using the BBQ then toast over the hot coals brushed with a little olive oil or melted butter perhaps.

Ingredients

  • 6 fillet steaks
  • 2 small red onions
    - outer skin removed, cut into quarters
  • 150g Cambozola cheese
    - sliced
  • Marinade:
  • 2 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 1 tsp dried oregano
  • Garnish
  • Crusty bread
    - slices, fresh or toasted
  • Olive oil or melted butter
    - optional

Instructions

  • Prepare marinade:
  • 01 In a bowl combine olive oil, balsamic vinegar and dried oregano. Mix well. Add onion quarters.
  • 02 In a large flat dish, place fillet steaks and pour over marinade and onions. Cover and refrigerate for minimum of one hour to marinate.
  • To cook onions:
  • 03 Before cooking separate the onions from the meat, skewer and barbecue until lightly charred and tender (see picture).
  • To cook steaks:
  • 04 Place the steaks on a hot barbecue and seal on both sides. Now add the sliced Cambozola cheese and allow this to melt before serving.
  • To serve:
  • 05 When the steaks are cooked, serve immediately on fresh or toasted crusty bread garnished with the barbecued onions.

Notes

Buy only good quality fillet steaks for this recipe and cook the steaks to your own preference; rare, medium or well done. If a BBQ is not available cook under a hot grill. For extra deliciousness brush the inside of the bread with olive oil or melted butter and toast.
