Baked Spinach
This is a wonderfully decadent, creamy rich baked spinach recipe. Perfect for that easy supper and a truly excellent way to serve spinach, which I am quite sure will please everyone. Be warned, this recipe is not low in calories due to the addition of the cream cheese and the generous amounts of parmesan cheese which together are a must, truly making this dish absolutely delicious.

Ingredients

450-500g baby spinach- washed in cold water, cooked and chopped

Cheesy Sauce

60g butter
-
1 medium red onion- finely chopped

2 cloves garlic- crushed
-
100ml milk
-
226g cream cheese
-
Sea salt- to taste

Freshly ground black pepper- to taste

Pinch cayenne pepper
-
2 tbsp grated parmesan

Topping:
-
4 tbsp freshly grated Parmesan- nice thick layer
Instructions

Prepare spinach:

01 Firstly clean and cook the spinach: wash in plenty cold water, and with hands squeeze out excess water and place in a suitable bowl for the microwave. Place a plate on the top (or cling film) and microwave 3-4 minutes on high until spinach wilted. Allow to cool and DRAIN WELL before either placing into a food processor or chopping by hand.

Make cheesy sauce:

02 In a large pan over medium heat, melt butter and add chopped onion and garlic, cook until soft (approximately 5 minutes). Stirring frequently to prevent burning. Add milk and cream cheese, simmering gently until cream cheese is melted. Season with salt, pepper, and a pinch of cayenne. Now add chopped spinach and dried parmesan cheese and stir to combine.

Assemble:

03 Tip into a well buttered oven proof dish, top with additional grated parmesan cheese.

Cook:

04 Place in the oven for 30 minutes or so and cook until golden brown and bubbling hot.

Serve:

05 Best enjoyed hot either with roasted meats or on its own with fresh farmhouse style country bread.
Notes
This versatile recipe can also be made in individual ramekins and served as a starter for a dinner party.
