African Peanut Sauce

This recipe is a unique African adaption to the classic peanut sauce. Traditionally enjoyed in Africa with a spicy plantain banana dish or sweet potato mash, however, I particularly like it with a simple piece of barbecued chicken or lamb.

Ingredients

  • 250g raw peanuts
  • 1 small red onion
  • 1 clove garlic
  • Pinch chilli flakes
    - optional
  • 2 tomatoes
  • 3 tbsp vegetable oil
  • 300ml cold water
  • Sea salt flakes and ground black pepper
    - to taste

Instructions

  • 01 Place peanuts, onion, garlic, chilli flakes and tomatoes in a food processor and pulse to a chunky puree.
  • 02 In a pan add oil. Heat and add peanut puree. Cook for 1-2 minutes before adding the cold water.
  • 03 Bring to the boil, season well and simmer gently approximately 30 minutes, stirring regularly.
  • 04 Best served hot.

Notes

Only use raw peanuts without husks, are they are more healthy than the ready salted. The chilli is optional but if you do like a hint of heat, I recommend to use it. Cook slowly and stir regularly to prevent any burning at the bottom of the pan.
