Cumin Cucumber Raita Salad
The perfect yoghurt based raita salad using thick plain yoghurt, cucumbers and delicately flavoured with cumin and a touch of black pepper.

Ingredients

350g plain full fat yoghurt- or plain yoghurt non dairy alternative

1 large telegraph cucumber- washed, cut into small cubes

1 large tsp cumin seeds

Grind of back pepper

Garnish

Scattering of cumin seeds
Instructions

Step ONE:

01 Prepare cucumber; wash and cut into small dice. Peel if you wish but not necessary.

02 In a bowl mix yoghurt and cucumber. Season with black pepper and cumin seeds. Turn into a small attractive serving bowl. Sprinkle more cumin seeds on the top. Cover with cling film and chill in the refrigerator until required.

03 Take to the table as is an enjoy with your favourite curry.
Notes
I like to make this raita with thick plain Greek yoghurt but of course if seeking non dairy, then use your favourite plain plant based alternative.
