Coriander Chilli Salsa
Coriander chilli salsa is a great accompaniment to barbecued or roasted meats and also perfect with your favourite Indian curry, so not a salsa for the faint hearted.

Ingredients

1 red onion- papery outer skin removed, quartered

1-2 hot green chillies- only stems removed

2 fresh tomatoes

1 bunch fresh coriander
-
½ lemon- juice only

Seasoning

Plenty of freshly ground black pepper

Sea salt- to taste
Instructions

01 Using a food processor pulse all the above ingredients to a coarse texture.

02 Check the seasoning and add what you think you need to suit your taste.

03 Place in a small bowl and keep until required.
Notes
This salad is best eaten immediately however, if covered and chilled will maintain its flavour for up to 2 hours.
