A delightfully versatile homemade egg mayonnaise, full of garlic, mint and parsley. Perfect with roast lamb, or even a  barbecued steak, however, equally as delicious with oven roasted vegetables for those who wish to pass on meat and enjoy a more vegetarian diet.

Roast Lamb with Garlic Mint Mayo

Ingredients

  • 1 egg yolk
  • 1 clove garlic
    - roughly chopped
  • 1 tbsp cider vinegar
  • 125ml extra virgin olive oil
  • 30 mint leaves
    - finely chopped
  • Handful of fresh parsley
    - finely chopped

Instructions

  • Using a food processor:
  • 01 Place egg yolk, garlic and vinegar into the machine. Blend to a smooth liquid. Now dribble in the oil and whiz the machine until you have a thick mayonnaise. Add the mint and parsley. If the mayonnaise is too thick add a splash or two of warm, boiled water.

Notes

This delightful mayo should be the consistency of a thin sauce. Best kept in a glass jar or plastic container with a lid, and stored chilled in the fridge for a couple of days.
