Beans and Greens
Simple beans and greens is a delightful ‘ultra healthy’ recipe based on the Italian classic Rapini and beans but using spinach and kale.

Ingredients

100g baby spinach leaves

100g curly kale- chopped

1 x 400g cannellini beans- drained

2-3 tbsp extra virgin olive oil

1 red chilli- finely sliced

1 large red onion- peeled, thinly sliced

2 whole garlic cloves- peeled, roughly sliced

250-300ml cold water

Seasoning
-
Sea salt flakes

Plenty of freshly ground black pepper

Garnish

Extra virgin olive oil

01 In a large deep sided pan add olive oil and heat. Add sliced onion, garlic and red chilli. Cook slowly until soft. Add beans and water. Cook 5-10 minutes until soft, using the back of a spatula to mash some of the beans for an extra creamy sauce. Add seasonings. Add all the greens. Mix well. Cook a further few minutes to soften.

02 Take to the table hot and enjoy with freshly boiled rice or thick slices of crunchy sourdough bread.

03 Always top with oodles of extra virgin olive oil.
Notes
Butter beans also work well with this recipe.
