Spicy Jalapeños Sauce
A delicious spicy and fiery jalapeños buttermilk sauce, which is perfect as an accompaniment to any roast chicken, grilled steaks or roasted vegetable. This delicious sauce can also be used as a marinade to tenderise beef, chicken and lamb. Very versatile and ultra delicious.

Ingredients

600ml buttermilk

2 fresh orange or green jalapeños- halved, seeds removed and chopped

2 tsp bottled jalapeños- drained and chopped

1-2 cloves garlic

1 small red onion- chopped

2 green spring onions- trimmed and chopped

1 lemon- rind and juice

Large handful of coriander leaves
Instructions

Using an electric blender:

01 In a small bowl add all the ingredients and using a hand electric blender process until combined.

Using a food processor:

02 Place all the ingredients into a food processor and pulse until well combined.

Store:

03 Pour source into a container and cover. Keep well chilled until required, either as a sauce or marinade.

For a sauce:

04 Take to the table served in an attractive bowl or jug.
Notes
This quantity makes a generous 600-650 ml of sauce, which will keep 2 days in the refrigerator. If too much HALVE the quantity. If you are unable to buy buttermilk I recommend to make your own - mix 600ml milk with the juice of 1 LARGE lemon (or 2 medium size). Leave to sit and thicken for 5 mins after which you will have homemade buttermilk.
