Natural Celeriac Soup
Natural celeriac soup is full of natural flavour and goodness. No extras other than a simple onion and good stock. Absolutely delicious.

Ingredients

Soup

60g butter
-
1 large red onion- chopped

1 large celeriac root- washed, peeled and cut into chunks

4 celery stalks and leaves- washed, thickly sliced

1 litre chicken stock- or water

Freshly ground black pepper- to taste

Sea salt- to taste

1 large bayleaf

Garnish

Watercress sprigs
Instructions

01 Melt butter in large, deep saucepan.

02 Add chopped onion and soften.

03 Add all remaining ingredients, lastly the stock and bring slowly to the boil.

04 Reduce heat and simmer for 40 minutes.

05 Remove bay leaf and blend to a thick puree in a food processor.

Serve

06 Take to the table hot, served in attractive bowls or cups garnished with a wee sprig of fresh watercress.
Notes
This recipe is a good base for any homemade soup – feel free to be creative and add any vegetables you like. I like to serve the consistency of this soup thick but if you prefer, add extra stock or hot water to make it lighter in texture. This soup freezes well but may become slightly greyer in colour after freezing.
