Strawberry Plum Crumble

Strawberry plum crumble is a delicious autumn fruit crumble pudding. Fresh strawberries and plums are used but tinned would work also. For photographic reasons I made individual servings but this is not essential, as using a large oven proof baking dish works just as well. Delicious hot or cold with ice cream, custard or simple pouring double cream.

Ingredients

  • Soft Fruit Filling
  • 4-6 ripe autumn plums -
    - stones removed, chopped
  • 1 punnet of fresh strawberries
    - hulled and halved
  • 1 orange
    - juice only
  • 1 tbsp caster sugar
    - optional
  • Oat Crumble
  • 1 tbsp plain flour
  • 90g rolled oats
  • 100g Demerara sugar
  • 90g butter
    - softened + extra for baking dish
  • 1 tsp cinnamon

Instructions

  • Prepare baking dishes:
  • 01 Lightly butter baking dishes.
  • Prepare soft fruits
  • 02 Chop all soft fruits into bite sized pieces. Pile into baking dishes. Cover with a sprinkling of caster sugar (optional) and juice from 1 orange.
  • Oat Crumble:
  • 03 In a bowl mix oats, Demerara sugar and flour. Add softened butter and with a fork mix well to form chunky breadcrumb like pieces.
  • Assemble:
  • 04 Tip the oat crumble mixture all over the top of the chopped fruits.
  • Bake:
  • 05 Place on a baking tray lined with a layer of non stick paper to catch any drips should the fruit juices bubble over during cooking.
  • Serve:
  • 06 Enjoy hot or cold with ice cream, custard or pouring cream.

Notes

This is such an easy pudding to make, and it freezes beautifully before or after cooking. If fresh strawberries and plums are a problem to get use tinned, well drained. Can be made individually or as one large delicious pudding.
