Fig Brioche Pudding

Fig brioche pudding is a creamy baked egg custard pudding. Full of delicious figs, combined with butter brioche and soaked in a vanilla based egg custard.

Ingredients

  • 6-8 small ripe figs
    - thickly sliced
  • 6-8 brioche
    - oblong shaped shop bought buns, all sliced into 4-5cm pieces
  • Rich Vanilla Custard
  • 3 eggs
  • 1 large tbsp caster sugar
  • 1 tsp vanilla extract
  • 300ml double cream
  • 300ml milk
  • Topping
  • 1-2 tbsp demerara sugar
  • Other
  • Large knob of butter for grease pudding dish
    - softened

Instructions

  • Prepare baking dish:
  • 01 Generously butter a 22cm deep ovenproof pudding dish with softened butter.
  • Make egg custard:
  • 02 Place cream, milk, eggs, sugar and vanilla extract into a bowl. Whisk well together.
  • Assemble:
  • 03 Alternatively layer figs and brioche into the buttered pudding dish. Pour egg custard mixture all over. Allow to stand and steal 15 minutes to absorb the liquid. Just before baking sprinkle the top with the demerara sugar.
  • Bake:
  • 04 Place pudding dish into a deep sided baking dish, carefully fill with enough hot water to come halfway up the sides. Place in a pre-heated oven and bake until golden brown and pudding is set, with a soft wobble.
  • Serve:
  • 05 Take to the table hot and enjoy with oodles of vanilla ice cream.

Notes

When covering the figs and brioche with the creamy egg mixture, do not hurry the process and cover in stages, allowing the brioche to absorb as much cream liquid as possible.
