Miso Soup with Tofu
A delightful Japanese influenced style soup which is so easy to make, extremely healthy and full of natural goodness.

Ingredients

4 tbsp white Miso paste- or 6 individual sachets Miso powder

2 tsp fish sauce
-
2 tbsp soy sauce (Japanese)

6 cups of hot water

340g firm tofu- cut into small cubes

100g Asian greens- or bok choy, washed and trimmed

400g Japanese Udon noodles

Garnish
-
4 spring onions- finely chopped

Sesame seeds
Instructions

01 Place Miso, fish sauce, soy and water in a saucepan and bring to the boil. Reduce heat to a simmer and add all remaining ingredients bar the spring onions. Cook for 2 minutes or until noodles tender.

Serve:

02 Ladle hot soup into small bowls, garnish with finely chopped spring onions and a sprinkling of sesame seeds.
